One Pan Summer Chicken
There’s nothing better than an easy one pan dish that leaves you with barely any dishes. In this recipe we combine lemon, honey and garlic with chicken and asparagus. The flavour combination is perfect for a summer meal and makes for delicious leftovers. If you’re not a fan of asparagus, you can replace them with green beans, broccoli or carrots.
This recipe serves 4 people.
Cooking time: 30 minutes.
- Olive oil
- 4 boneless chicken breasts
- 1/4 cup Country Bee Prairie Wildflower Honey
- 1 tablespoons Italian seasoning
- 3 cloves of garlic (chopped)
- 3 bunches of asparagus
- 1 lemon (use as garnish)
- 1/3 cup freshly squeezed lemon juice
- 1/2 teaspoon of black pepper
- 1 teaspoon of salt
How to prepare
1: Place your over rack in the middle of your oven and pre-heat to 400°F (200°C).
2: Combine the lemon juice, honey, chopped garlic, Italian seasoning, salt and pepper in a bowl and stir it.
3: Place the boneless and skinless chicken breast on a baking sheet and pour 3/4 of the mixture over it, covering both sides of the chicken.
4: Cover the dish with tinfoil and place in the oven for 20 minutes or until the chicken is cooked through.
5: Take the dish out of the oven and place the asparagus onto the baking sheet next to the chicken and pour the remaining mixture over the asparagus. After you do this, broil for another another 10 minutes (uncovered) until the asparagus are cooked.
You can add some fresh parsley and lemon slices as a garnish when the dish is ready to enjoy.
